i will have to say that my 2008 thanksgiving now ranks up with my 2004 new year's, my 2003 fourth of july and of course, my 21st birthday, which means it was pretty much amazing. i was able to catch up and visit with a lot of my loved ones. it is always pleasant to do my favorites with friends like grabbing a bite to eat at cottage cafe, drinking a glass of wine lakeside, eating chick-fil-a and/or wanting chick-fil-a on a sunday, watching back to back movies in my pajamas or having a movie date along with panera bread, oh and i cannot forget taking "bulge" face pictures.
i would like to interject here another item that added to the magnificence of this year's thanksgiving, my So Berry Simple Broccoli Slaw recipe...
Ingredients
- 2 bundled heads of broccoli
- 1/2 red onion, chopped
- 1/2 lb. of bacon
- 1 1/2 cup of raisins
Dressing
- 1 1/4 cup of mayo
- 1/2 cup of sugar
- 2 tbsp. of white vinegar
Directions
- fry bacon and crumble
- mix with broccoli, onion, raisins and dressing
- refrigerate
*best if refrigerated six hours prior to serving, not overnight!*
my only low of this thanksgiving was my alma mater's embarrassment on national television. enough said. even though that was a total downer, camp bernie just brushed it off. nothing a little shotski can't fix. right?
on a serious note, this holiday was possibly the best because my time in the windy city has made me appreciate my roots. i also realize the true meaning of family and how precious each moment is with those you love. as the saying goes, "no matter what, you will always have family, quirks and all."
